Sunday Recipe Makeover- Best Banana Muffins Evah
The original very good recipe from my mommy:
Banana Bread
-Cream 1/2 cup butter & 1 cup sugar well
-Add 2 eggs, 1 at a time
-Add 3-4 mashed bananas (~2 cups)
-Add 2 cups flour
-Add (I keep typing ass and having to change it) 1 tsp. baking soda
-Ass Add 1/2 tsp. salt
-Chocolate chips optional
-Mix all together slowly.
-Pour into greased bread pan and bake @ 350 for 60 min or until browned and a toothpick comes out clean.
-Cool 5 min. in pan and then on rack. Longer in pan = softer on outside.
This is a great can’t-screw-it-up recipe (right Chelle?). So good I always triple it. But now? I’ve made it healthier and better…

(Always always always double or triple the recipe. I’m giving this to you the way I made it - you can cut it down if you don’t have enough rotten fruit in your freezer.)
-Cream 1 1/2 cups butter and 1 cup sugar well. (Cooking with kids? Just plop it in a bowl in the sink and give them a whisk. The learning tower really helps. If you’re alone, a mixer is easier.)
-Add 4 eggs, one at a time
-Add 10-12 large mashed bananas (I freeze them until I have enough for a big recipe. A small recipe lasts about 3.4 minutes in my house and it’s not worth my time and effort.)
-Add 4 cups whole wheat flour
-Add 2 tsp. baking soda
-Add 1 tsp. salt
-Add 1/3 cup ground flax seeds
-Add 1/3 cup hemp seeds (toasted or not - your preference)
Mix all together slowly. Spoon into greased mini muffin tins. This recipe made 3 trays for me - 72 mini muffins.
Bake @ 350 for 15 minutes.
We made these when Primo had a friend over. The kids did everything except crack the eggs and touch the hot oven. I put the mixing bowl inside a larger bowl in the sink to save the spillage and both kids stood together in the learning tower to do it. They had a blast, and the muffins were to die for!

Mmmm banana muffins and bread …. we made some yummy rye bread this morning (we as in J but I ate it so I participated I figure)
