Chewy Cheerio Squares.
Like rice krispie squares, but with more fiber. A nice change from the norm.
1. Melt 1/4 cup butter in a large-ish pot. (Why do they call it a saucepan in recipes?)
2. Add 40 large marshmallows & stir on medium low heat until completely melted.
3. Stir in 1/2 teaspoon of good vanilla. If you only have crappy vanilla, skip it.
4. Stir in ~6 cups of cheerios until evenly coated. If you like your squares crunchier, add more. If you like them chewier, add a little less.
5. Dump into a greased 13×9 pan. Dampen your hands with warm water or spray them with an oil spray lightly, & use them to press the cheerio mixture firmly into the pan. Let cool, cut into squares & eat.
6. Optional: Melt a bag of chocolate chips over a double boiler or in two 30 second intervals in the microwave, stirring in between. Pour over top & let harden before cutting.
Yum-o!
Nothing healthy about it other than the increased fiber over the traditional r.k. squares, but they’re good in moderation.

I’ve been using brown rice cereal rather than rice crispies, not bothering with the butter and adding a 1/4 cup of mulled flax seed. My husband thinks they taste stale, G and I are fine with them…we’ll both do anything for sweets!!
